is there any possibility to get the following information of all users of my organization with the ReST-API?
Or does exist a method to search for a user? (via username)
I didn't find appropriate methods.

This is currently unsupported in the REST API. There is a SOAP API which supports it here: https://support.panopto.com/resource/APIDocumentation/Help/html/429305d9-3e44-74bb-d7cd-a98825f6b4f8.htm
Can you elaborate on your use case? I gather from your question you don't actually need to list all users; rather, your goal is to identify a single user based on some search term and the full list approach would be one technique to accomplish it.
