What's the best way to determine our total usage in hours/minutes of Panopto over multiple years? I have no need for more detailed information than that.

To determine this, your best course of action would be to run the "Folder usage" and "Total sessions created per user" system usage reports and then combine the sum of "Minutes Delivered" from the "Folder usage" report (column E) and the sum of "Minutes Created" from the "Total sessions created per user" report (column D) to find the total hours/minutes of Panopto usage over multiple years. Additionally, I would recommend submitting a feature request to add a report that covers the total usage in hours/minutes of Panopto: New Feature Request.
